We use the Toulouse goose, which is a French breed, originally from the area of Toulouse in south-western France. They are pastured-raised in Vermont, USDA Inspected, Grade A from a small organic farm then shipped to us. Prized because of their rich fat content and the flavor provided.
These particular geese are difficult to get after the holidays and in the summer months, so supplies may dry up temporarily. They are primarily raised for fine dining restaurants and dinner tables over Thanksgiving and Christmas holidays.
Ingredients: Hand-deboned whole Toulouse goose, heart, liver, Whole Fresh Egg (shell, white, yolk), Psyllium, Vitamin E, Astaxanthin, manganese gluconate. *All ingredients organic unless otherwise noted.
